Oven-roasted kid and potatoes

Serves 4-6 people



  • 3 kg of kid meat
  • 2kg of small potatoes
  • 2 large onions
  • 10 Garlic cloves
  • 1 pepper
  • 2 tbsp. paprika paste
  • 2 chilli peppers
  • 1 bottle of white wine
  • Adega Mayor Olive Oil, as needed
  • 1 sprig of rosemary
  • 2 laurel leaves
  • Salt, as needed
  • Pepper, as needed
  • Balsamic vinegar, as needed


Turnip greens

  • 3 bunches of turnip greens
  • Adega Mayor Olive Oil, as needed
  • Salt, as needed



Preparing the Kid and Potatoes

  1. The Kid should be prepared at least 8/12 hours in advance, with a marinade. In a bowl place the salt, pepper, chillies, 5 crushed garlic cloves, paprika paste, a drizzle of Adega Mayor olive oil and balsamic vinegar, bay leaves, rosemary and a bottle of white wine (we used a bottle of Caiado Branco). Stir in the marinade dissolving the salt and pepper and the paprika paste. As soon as the mixture is homogeneous, add the kid in pieces and set aside for at least 8 hours.
  2. To prepare the baking tray, start by cutting the onion into slices and place them in the bottom of the tray, together with 5 cloves of chopped garlic.
  3. Wash the potatoes thoroughly by rubbing their skin to remove all dirt.
  4. Cut the potatoes in halves, arranging them on the bottom of a tray on top of the onion and chopped garlic.
  5. Place the kid on top of the potatoes and drizzle with the marinade.
  6. Place the tray, covered with aluminium foil or a lid, in a preheated oven at 180 degrees Celsius for about 1h30-2h. The time in the oven may depend on the oven.
  7. In the last 10 minutes remove the foil and let it brown.


Preparing the turnip greens

  1. Bring water to the boil with salt.
  2. When the water is boiling, add the turnip greens, previously selected and washed.
  3. After 5 min, remove the greens, drain them and rinse them in cold water to stop the cooking and to keep the spinach's vibrant colour. Drain again and serve with a drizzle of Adega Mayor Olive Oil.


When serving

  1. Serve by arranging a bed of turnip greens on the plate, the potatoes on top of them and the kid meat on top.
  2. To finish, Open your senses to Words with a Pai Chão (available at the Adega Mayor online shop).
